Classic Prawn Cocktail

This classic prawn cocktail recipe combines succulent Atlantic prawns with a homemade Marie Rose sauce and more. Shell-on prawns are the best variety to use for both texture and flavor.

Classic Prawn Cocktail: Tips for the Prawns

You can make a nice risotto stock from the shells after peeling them too. Most Atlantic prawns are sold cooked and frozen and the best way to defrost them is to leave the in the fridge for several hours.

Don’t defrost them in water because they will lose some of their flavour. When you peel them, you should split them almost in half through their backs and remove the bitter dark vein running through them. This is optional but it does improve their taste.

A classic prawn cocktail is best served fresh so make it just before serving if you can. Feel free to make any adjustments to this recipe for prawn cocktail if you want to.

You can use tomato concentrate (tomato puree in UK English) instead of tomato chutney, for example, substitute iceberg lettuce for the Little Gem (baby romaine) lettuce, or leave out the Tabasco sauce if you don’t want the spicy hint. The whole wheat (wholemeal) bread can be swapped for white bread too, if that is what you prefer.

A lot of people wonder can you freeze wonton wrappers? The answer is yes you can freeze wonton wrappers (and you can also buy them frozen). The problem is if you freeze a pack of 50 wrappers and only want to make 10 wontons, how do you pull them apart? From trial and error, I have found that if you let the package thaw at room temperature until you can peel a few off the top without breaking any, then pop the unused ones back in the freezer, that works well. Alternatively you can thaw them all, make wontons and then freeze the wontons. It all depends on the wonton recipe you want to make, but sometimes if you are taking the trouble to make .....

After making a number of steamed wonton recipes, there will come a time when you wish to create your own wonton fillings. Although you can use pretty much any kind of meat, poultry or fish in your wonton filling, it is important to grind or chop it as finely as you can. You need your ingredients to be very small for wonton fillings, so you can mix everything together better. Anything which is not cut into small enough pieces means you risk the wonton wrapper coming apart while they’re being cooked and then the filling will leak out which obviously you don’t want to happen. This particular Hoisin duck brioche dish was inspired by a recent visit to Ruby, Exeter, where I enjoyed something very similar. Yep here I am dreaming of Ruby again! Well anyway the duck and hoisin are beautiful together, along with the cucumber, and although I am more used to enjoying this mixture in pancake wraps, I found the brioche really good with them, since brioche is naturally sweet and chewy, and just seemed to complement the hoisin duck flavors.
