Mexican Cocktail Nachos Recipe

These Mexican cocktail nachos are a great starter if you are having a Mexican main course and they also make a nice snack at a cocktail party. You can easily double the amount of ingredients in this Mexican starter recipe if you want to make more.

Different Types of Nachos

Nachos come in many styles. Personally I like mine with lashings of guacamole, salsa and sour cream, beef ladled on top, black olives, jalapenos, cheese and more. Well, I like ‘everything’ nachos. It is perhaps easier to explain that way. If you want a simpler recipe though, with the cheese and japalenos standing out, then choose this Mexican cocktail nachos recipe.

My preferred version of the dish is the one I pick if I want to make a filling meal, not a starter recipe. Nachos are so easy to make and it is good to use a big dish and then plonk the finished nachos in the middle of the table so everyone can reach in and help themselves to the hot, cheesy nachos.

Cocktail Nachos Starter
Tortilla chips, cheese, salsa and jalapenos come together to make this fantastic nachos recipe. You can add as much or as little chili as you wish, and also serve guacamole and sour cream on the side.

Ingredients
  • 10g (1/3 oz) coarsely grated cheddar cheese
  • 2 tablespoons spicy tomato salsa
  • 20 salted corn tortilla chips
  • 50g (1¾ oz) pickled green jalapeños, finely sliced
  • Sliced black olives and sliced green onion (optional)
  • Cilantro (fresh coriander), to serve
Instructions
  1. Heat the oven to 200 degrees C or 400 degrees F.
  2. Lay out the corn chips on a baking tray.
  3. Top them with cheese and 2 slices of jalapeño.
  4. Add black olives and green onions too if you want.
  5. Bake for 5 to 10 minutes or until the corn chips are hot and the cheese has melted.
  6. Add salsa and cilantro.
  7. Serve hot.

Nothing says ‘welcome to my home, let’s have a great meal’ more than a big, steaming hot plateful of nachos. When your dinner guests see this they will know they are in for a great evening. South of the border parties are very enjoyable and you can bring the Mexican color and vibrancy to your own dinner table by making this Mexican cocktail nachos dish. Add more if you want – sour cream, refried beans, whatever you want, or keep things simple and make the recipe exactly as it is. This is a lovely, crunchy dish. We added black olives and green onions but you don’t have to.
