Orange and Avocado Salad Recipe

It is not too filling either meaning it is a smart choice for a starter.
Buy slightly under-ripe avocados and let them sit at room temperature for a couple days until they feel soft, then they are perfect to use. Do not let them get too ripe because they get mushy and brown. Save any in that condition for making your next batch of guacamole.
I love avocados and usually have a couple in the refrigerator to mash for making guacamole, to slice to top chili con carne, or to snack on if I want something rich and creamy, as well as full of ‘good’ cholesterol.
- 2 oranges, peeled and sliced
- 3 avocados
- 1 tablespoon lemon juice
- 4 tablespoons extra virgin olive oil
- 1 white onion, thinly sliced
- Salt and black pepper
- Peel the avocados and discard the stones.
- Slice them thinly and arrange on a serving platter.
- Arrange the orange slices around the avocado.
- Sprinkle the onion on top.
- Dissolve some salt in the lemon juice, add the oil and pour over the top.
- Sprinkle with pepper.
