Orange and Avocado Salad Recipe

If you are looking for a quick, easy vegetarian salad recipe, this one is very good and takes just minutes to put together. The sharpness of the oranges contrasts very well with the soft creaminess of the avocado and the lemon juice and oil dressing finishes it off just right. I love this orange and avocado salad recipe and have made it a few times now.

Simple Yet So Good

This orange and avocado salad recipe might sound very basic but a lot of recipes are great because they are kept simple, not in spite of it. Avocado offers a creamy nutty flavor which is wonderful with the orange, and this is also a colorful dish, not just a tasty one. It is not too filling either meaning it is a smart choice for a starter.

Buy slightly under-ripe avocados and let them sit at room temperature for a couple days until they feel soft, then they are perfect to use. Do not let them get too ripe because they get mushy and brown. Save any in that condition for making your next batch of guacamole.

I love avocados and usually have a couple in the refrigerator to mash for making guacamole, to slice to top chili con carne, or to snack on if I want something rich and creamy, as well as full of ‘good’ cholesterol.

Oranges, avocado, lemon juice and onion combine with oil, salt and pepper, to make this simple salad. The flavors come together beautifully and this offers a colorful result which everyone will love.

Ingredients
  • 2 oranges, peeled and sliced
  • 3 avocados
  • 1 tablespoon lemon juice
  • 4 tablespoons extra virgin olive oil
  • 1 white onion, thinly sliced
  • Salt and black pepper
Instructions
  1. Peel the avocados and discard the stones.
  2. Slice them thinly and arrange on a serving platter.
  3. Arrange the orange slices around the avocado.
  4. Sprinkle the onion on top.
  5. Dissolve some salt in the lemon juice, add the oil and pour over the top.
  6. Sprinkle with pepper.
