Oven Roasted Tomatoes with Garlic
This oven roasted tomatoes with garlic recipe is perfect if you want a side dish. Combining the natural sweetness of fresh tomatoes with garlic and herbs, this is such a simple recipe and it makes a change from the usual platter of roasted root vegetables, mashed potatoes, corn on the cob or broccoli.
Not that there is anything wrong with those of course but sometimes it’s nice to have a change of pace. Everyone loves tomatoes whether they are canned, fresh, cherry, plum or another kind, because this vegetable (well, technically a fruit) goes with just about everything. Try this oven roasted tomatoes with garlic dish and you’ll see how delicious they can be.
Very easy to prepare, you simply need to slice your tomatoes and then add the oil and seasonings and roast them in the oven. Tomatoes do not take long to cook because they are soft and high in water content.

Choose firm tomatoes, ones which are ripe but not squishy, and use a very sharp knife to cut them horizontally across into thick slices, maybe 3 slices per tomato. You could also cut them in half for thicker ones. A good knife should be able to slice right through without leaving any of those amateur looking ragged edges.
The next step when making this oven roasted tomatoes with garlic recipe is to drizzle on some olive oil, or another kind if you don’t have olive and then add your garlic, rosemary and some salt and pepper.
Have the oven nice and hot when you pop them in and then serve them alongside your favorite meat, poultry or fish dish, or try them with rice or pasta, or else let them get cold and add them to a salad. There are all kinds of ways to serve these lovely tomatoes.
- 4 fresh tomatoes
- 1 finely chopped garlic clove
- Olive oil
- 1 teaspoon minced fresh rosemary
- Salt and black pepper
- Preheat the oven to 350 degrees F.
- Slice the tomatoes and arrange them in a lightly greased baking dish.
- Drizzle oil over them.
- Scatter rosemary and garlic over them.
- Grind some salt and pepper on them.
- Roast for 25 minutes or until they are tender.
- Serve hot.
