Healthy Banana and Carrot Curry
Sometimes the best recipes are the simplest, and it is a myth you have to use lots of different ingredients to make a nice curry recipe. Take the following healthy banana and carrot curry recipe for example.
The main ingredients are carrots, banana and onion, and the sauce is made with curry powder, orange juice and a splash of yogurt. Use fat-free yogurt and you can see how healthy and low in both fat and calories this banana and carrot curry recipe is.
Serve this banana and carrot curry with rice or naan bread or keep things healthy and have a chapatti bread with some raita (cucumber, yogurt and mint dressing) on the side. Perhaps you have a meat or fish curry on the stove and you want to make a side dish to go with it, something with veggies, in which case this would go very nicely with it.
The Wonder of Curry
Indian food is one of the best cuisines in the world, and certainly one of the most distinctive. Everyone can recognize the amazing aroma of curry spices and although not every Indian dish is spicy, all are tasty and offer lovely flavors.
Curry is also something you can tweak as much as you wish. Throw in some well-drained thawed spinach (or fresh chopped spinach) if you like, or some chopped mushrooms, bell peppers or other fruit or veggies. Everything will combine perfectly in this banana and carrot curry.
- 2 carrots cut into 1 inch (2½ cm) lengths
- 1 small sliced banana
- 1 small sliced onion
- 1 chopped tomato (optional)
- 1 teaspoon curry powder
- 2½ fl oz (75ml) orange juice
- 2½ fl oz (75ml) water
- 1 oz (30ml) yogurt
- Boil the carrots and onion in the juice and water 10 minutes or until tender.
- Add the tomato and banana.
- Cook 1 minute.
- Add the curry powder and yogurt.
- Heat gently.
- This will serve 1 as a main dish or 2 if you are having other dishes.
