Take sweet potatoes and season them with a zesty steak rub, then grill them until they’re perfectly tender. To top it all off, drizzle on a delicious homemade dressing made with garlic and chipotle, giving it a fantastic south-of-the-border twist.

Ingredients

Scale
  • 4 medium sweet potatoes, cut lengthwise into wedges
  • 2 unpeeled garlic cloves
  • 1 cup (250ml) mayonnaise
  • 2 teaspoons steak seasoning
  • 1 tablespoon olive oil
  • 2 tablespoons chipotle chili in adobo, finely chopped

Instructions

  1. Preheat the grill (BBQ) to medium hot.
  2. Wrap the garlic in foil and grill for about 12 minutes, turning once. Peel the cloves and smash them. Mix the garlic with the chipotle and mayo in a bowl.
  3. Rub the sweet potatoes with oil and then sprinkle on the steak seasoning.
  4. Grill the potato wedges for about 8 minutes or until golden brown and tender, flipping once.
  5. Now you can serve the sweet potato wedges with the spicy garlic mayo.

Notes

  • You can definitely see the grilling magic at work here with those gorgeous charred spots. Cooking them over an open flame ensures they’re served hot and perfectly cooked.
  • A sprinkle of steak seasoning is all you need to bring out the potatoes’ natural sweetness without drowning it out, adding just the right touch of savory goodness.
  • As for the garlic mayo, imagine a thick, creamy dip that pairs wonderfully with the potato wedges. Trust me, you’ll want to make a big batch because they’re incredibly hard to resist. This recipe is super simple but the end result? Absolutely amazing!
