1 meaty ham bone or 1 big ham hock
3 pints (1.5 liters) water
1 chopped yellow onion
2 teaspoons salt
1 1/2 cups (300g) dried lentils
1 cup (large handful) chopped celery
3 or 4 sliced medium carrots
1 bay leaf
1 teaspoon white sugar
1/4 teaspoon black pepper
Instructions
Put the ham bone, carrots, water, lentils, celery, onion, sugar, pepper, salt and bay leaf in a pot.
Cover the pot and bring the soup to a boil.
Reduce the heat and simmer the soup for about an hour or until the lentils are tender.
Take out the ham bone or hock and remove the meat.
