Mexican Cocktail Nachos Recipe

Tortilla chips, cheese, salsa and jalapenos come together to make this fantastic nachos recipe. You can add as much or as little chili as you wish, and also serve guacamole and sour cream on the side.

Ingredients

  • 10g (1/3 oz) coarsely grated cheddar cheese
  • 2 tablespoons spicy tomato salsa
  • 20 salted corn tortilla chips
  • 50g (1 3/4 oz) pickled green jalapeños, finely sliced
  • Sliced black olives and sliced green onion (optional)
  • Cilantro (fresh coriander), to serve

Instructions

  1. Heat the oven to 200 degrees C or 400 degrees F.
  2. Lay out the corn chips on a baking tray.
  3. Top them with cheese and 2 slices of jalapeño.
  4. Add black olives and green onions too if you want.
  5. Bake for 5 to 10 minutes or until the corn chips are hot and the cheese has melted.
  6. Add salsa and cilantro.
  7. Serve hot.
