Summer Fruits Ice Tea

This recipe combines different flavors of tea with honey, lemon, strawberries and mint. The result is an incredibly refreshing summertime drink which is wonderful served over ice.

Ingredients

  • 3 cups (750ml) boiling water
  • 1 lemon
  • 4 strawberries
  • 12 mint leaves
  • 1 English breakfast teabag
  • 1 strawberry and rosehip teabag
  • 1 hibiscus teabag
  • 2 tablespoons honey
  • 10 ice cubes

Instructions

  1. Put the teabags and honey in a pot and pour over hot (not boiling) water.
  2. Chill at room temperature, then in the refrigerator.
  3. Cut the lemons into thick slices and then in halves.
  4. Quarter the strawberries.
  5. Put the lemon slices and strawberries in a pitcher and mash a bit with a wooden spoon to release some flavor.
  6. Pour in the tea.
  7. Add ice cubes and serve.
  8. You can garnish the serving glasses with lemon, mint and redcurrants if you want, or similar garnishes.
