2 chopped bell peppers (1 red, 1 green)
Spray oil
2 chopped celery ribs
1 sliced carrot
6 quartered mushrooms
1 tablespoon tomato concentrate
½ teaspoon Cajun seasoning
Juice of ½ a lime
Instructions
Heat the spray oil in a skillet.
Sauté the vegetables until softened.
Add the Cajun seasoning and cook 1 minute.
Add the tomato concentrate and lime juice.
Cook gently for 5 to 10 minutes.
Notes
You can use any color of bell peppers you want, or even swap one for a poblano pepper.
