Looking for a low calorie dish which will satisfy your hunger? In this dish, bell peppers and other veggies are teamed with Cajun seasoning, tomato and lime, for a well-rounded dish.


  • 2 chopped bell peppers (1 red, 1 green)
  • Spray oil
  • 2 chopped celery ribs
  • 1 sliced carrot
  • 6 quartered mushrooms
  • 1 tablespoon tomato concentrate
  • ½ teaspoon Cajun seasoning
  • Juice of ½ a lime


  1. Heat the spray oil in a skillet.
  2. Sauté the vegetables until softened.
  3. Add the Cajun seasoning and cook 1 minute.
  4. Add the tomato concentrate and lime juice.
  5. Cook gently for 5 to 10 minutes.


  • You can use any color of bell peppers you want, or even swap one for a poblano pepper.
