Easy Banana Bread with Applesauce

Moist, dense and sweet, banana bread is always popular. Served warm from the oven with butter and honey, what could be better? This recipe uses applesauce for added flavor and moistness.

Ingredients

  • 3 ripe bananas
  • 1 teaspoon baking soda
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup (130 ml) applesauce
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup (225g) white sugar
  • 2 cups (260g) all-purpose flour

Instructions

  1. Preheat the oven to 350 degrees F (190 degrees C).
  2. Put the bananas in a bowl and mash them using an electric mixer.
  3. Stir in the sugar and let the mixture stand for 15 minutes.
  4. Beat in the applesauce and eggs.
  5. Beat in the baking powder and baking soda, salt and vanilla.
  6. Next, gradually beat in the flour, mixing it in thoroughly.
  7. Pour the mixture into a nonstick spray-coated 9 x 5 inch loaf pan.
  8. Bake for 45 minutes or until a toothpick inserted in the center of the loaf comes out clean.
  9. Take the banana bread out of the oven and let it stand for 10 minutes.
  10. Remove it from the pan, slice and serve warm, perhaps with butter and/or honey.

Notes

You can use parchment paper to line the loaf pan if you want, or just some nonstick cooking spray instead
