These flautas offer all that is good about Mexican cuisine –you have beautiful fresh ingredients, a nice contrast between savory and sweet, and some flavorful cheese too, along with tangy salsa for that perfect finishing touch.

Ingredients

  • 1 cup (165g) sweet corn kernels, fresh, canned or frozen
  • ½ cup (100g) canned green chiles, chopped
  • 1 cup (120g) Monterey Jack cheese, shredded
  • 16 corn tortillas

Optional, to serve:

  • Green salsa
  • Mexican crema
  • Chipotle salsa
  • Lime wedges
  • Cilantro (fresh coriander leaves)

Instructions

  1. Heat some oil in a skillet over a medium heat while you warm the tortillas, chop the chile peppers and shred your cheese.
  2. Now combine the chiles, cheese and corn and spoon a little of this mixture into each tortilla.
  3. Fold the tortillas up into small tubes.
  4. Cook the flautas over a medium to high heat, turning occasionally, until the cheese is melted and the tortillas are golden brown all over.
  5. Drain on paper towels for a minute and then serve hot, topped with green salsa and any other condiments and/or garnishes you want.
