Flavorful rice is topped with a tasty omelet and this Japanese classic is all ready to serve. You will love the simple flavors and wonderful results if you make this lovely dish.

Ingredients

  • 1 cup (185g) cooked rice
  • 2 large eggs
  • 1/2 cup (small handful) finely chopped onion
  • 1/2 cup (small handful) finely chopped vegetables (carrot, peas, eggplant etc)
  • 1/2 cup (small handful) finely chopped chicken breast
  • Butter, as needed
  • Ketchup, as needed
  • Salt and black pepper, to taste

Instructions

  1. Sauté the chopped onion in the butter for a few minutes or until translucent.
  2. Add the chicken and vegetables and cook in the pan until done.
  3. Add the rice and toss it until it is heated through.
  4. Add a couple tablespoons of ketchup and toss quickly, just to flavor and color the rice.
  5. Season the mixture with salt and black pepper.
  6. Mound the rice on a plate.
  7. Crack the eggs into a bowl and whisk in salt and pepper.
  8. Pour this mixture into a pan with some butter and cook the omelet until it is done but still slightly runny in the center.
  9. Put the omelet on to the rice or else cut down the middle so the egg runs into the rice a bit.
  10. Serve with some ketchup on top.
