Topped with smoked salmon and capers, this wonderful pizza offers a gourmet twist on the usual tomato sauce and cheese topped Italian dish.

Ingredients

Scale
  • 1/2 cup (120 ml) warm water (approx 105°F)
  • 4 thin red onion slices in rings
  • 3 oz (85g) thinly smoked cold-smoked salmon
  • 1/2 teaspoon dry yeast
  • 2 tablespoons olive oil
  • 1/3 cup (3 oz/85g) softened cream cheese
  • 1 tablespoon capers, drained
  • 1/4 teaspoon salt
  • 1 1/4 cups (6 oz/170g) bread flour
  • 1 tablespoon yellow cornmeal
  • 1 tablespoon chopped fresh dill (optional)
  • Cooking spray, as needed

Instructions

  1. Mix the water and yeast in the bowl of a mixer with dough hook attached and let it stand for 5 minutes or until bubbly.
  2. Add the oil and salt to the yeast mixture.
  3. Weigh or spoon the flour into dry measuring cups and level it off using a knife.
  4. Sprinkle the flour over the yeast mixture and mix for a couple minutes or until a soft dough has formed.
  5. Put your dough in a big bowl coated with cooking spray and cover the surface of the dough with cooking spray coated plastic wrap.
  6. Chill for 24 hours.
  7. Position an oven rack low down in the oven.
  8. Put a pizza stone on the lowest rack.
  9. Preheat the oven to 550°F and preheat the pizza stone half an hour before baking the dough.
  10. Take the dough out of the refrigerator and let it stand, covered, for an hour or until the dough comes to room temperature.
  11. Punch it down then roll it out to a very thin 14 inch round on a floured baking sheet, without raised edges which is sprinkled with cornmeal.
  12. Crimp the edges to make a 1/2 inch border.
  13. Pierce the dough a few times with a fork.
  14. Slide the dough on to the preheated pizza stone and bake for 4 minutes.
  15. Take it out of the oven and spread the cheese evenly over the crust.
  16. Arrange the onion over the cheese.
  17. Bake 5 minutes more or until the crust is golden brown then top evenly with salmon and capers, and sprinkle with the dill if using.
  18. Serve this smoked salmon pizza with capers immediately.

Notes

If you want to make this pizza on the grill, you can. Just cook the crust until it releases from the grill (that’s how you know it is done) then flip and top it and cook until completely done.
