Baked Onion Quiche Starters

Quiche always hits the spot, and these little onion quiches are gorgeous. Pair them with chips or a salad (or both) if you want. They are good warm from the oven, or chilled if you would rather.

Ingredients
 

For the Pastry:
  • 225 g (8 oz) all-purpose flour
  • 100 g (3 1/2 oz) butter
  • 2 tablespoons water
  • Pinch of salt
For the Filling:
  • 100 g (3 1/2) oz grated Cheddar
  • Salt and pepper
  • 2 eggs
  • 150 ml (2/3 cup) milk
  • 2 onions, sliced into rings
  • 2 tablespoons oil
For the Garnish:
  • Cilantro and raw onion slices (optional)

Method
 

  1. Sift the flour and salt into a bowl.
  2. Rub in the butter until the the mixture is like fine breadcrumbs.
  3. Add the water gradually and form the mixture into a ball.
  4. Put it on a lightly floured board, roll it out and use it to line 4 quiche rings or flan dishes which are 4 1/2 inches (11 cm) each.
  5. Cook the onion rings in the oil until they soften.
  6. Beat the eggs, add the milk, salt and pepper and cheese.
  7. Divide the onions between the 4 quiches.
  8. Pour over the egg mixture.
  9. Bake in a moderately hot oven (about 190 C or 385 F) for half an hour.
