Ingredients
For the Pastry:
- 225 g (8 oz) all-purpose flour
- 100 g (3 1/2 oz) butter
- 2 tablespoons water
- Pinch of salt
For the Filling:
- 100 g (3 1/2) oz grated Cheddar
- Salt and pepper
- 2 eggs
- 150 ml (2/3 cup) milk
- 2 onions, sliced into rings
- 2 tablespoons oil
For the Garnish:
- Cilantro and raw onion slices (optional)
Method
- Sift the flour and salt into a bowl.
- Rub in the butter until the the mixture is like fine breadcrumbs.
- Add the water gradually and form the mixture into a ball.
- Put it on a lightly floured board, roll it out and use it to line 4 quiche rings or flan dishes which are 4 1/2 inches (11 cm) each.
- Cook the onion rings in the oil until they soften.
- Beat the eggs, add the milk, salt and pepper and cheese.
- Divide the onions between the 4 quiches.
- Pour over the egg mixture.
- Bake in a moderately hot oven (about 190 C or 385 F) for half an hour.
