Ingredients
- 1 meaty ham bone or 1 big ham hock
- 3 pints (1.5 liters) water
- 1 chopped yellow onion
- 2 teaspoons salt
- 1 1/2 cups (300g) dried lentils
- 1 cup (large handful) chopped celery
- 3 or 4 sliced medium carrots
- 1 bay leaf
- 1 teaspoon white sugar
- 1/4 teaspoon black pepper
Method
- Put the ham bone, carrots, water, lentils, celery, onion, sugar, pepper, salt and bay leaf in a pot.
- Cover the pot and bring the soup to a boil.
- Reduce the heat and simmer the soup for about an hour or until the lentils are tender.
- Take out the ham bone or hock and remove the meat.
- Chop the meat and return it to the lentil soup.
- Discard the bay leaf.
