Ingredients
- 2 chopped bell peppers (1 red, 1 green)
- Spray oil
- 2 chopped celery ribs
- 1 sliced carrot
- 6 quartered mushrooms
- 1 tablespoon tomato concentrate
- ½ teaspoon Cajun seasoning
- Juice of ½ a lime
Method
- Heat the spray oil in a skillet.
- Sauté the vegetables until softened.
- Add the Cajun seasoning and cook 1 minute.
- Add the tomato concentrate and lime juice.
- Cook gently for 5 to 10 minutes.
Notes
- You can use any color of bell peppers you want, or even swap one for a poblano pepper.
