Creamy White Wine Pasta Sauce

White wine sauce is a classic accompaniment to pasta. This recipe also boasts butter, parsley and parmesan, and the finished flavor is exquisite. This is surprisingly simple to throw together too.

Ingredients
 

  • 1 lb (450g) uncooked white pasta
  • ¼ cup (60ml) olive oil
  • ½ teaspoon crushed red pepper
  • 5 tablespoons unsalted butter
  • 4 finely chopped garlic cloves
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup (125 ml) white wine
  • Small handful chopped flat parsley
  • Small handful grated fresh parmesan

Method
 

  1. Cook the pasta to al dente following the directions on the package.
  2. Heat the oil over a medium heat.
  3. Add the garlic and crushed red pepper, then sauté for a minute or 2, or until golden.
  4. Stir in the salt, pepper, white wine and butter.
  5. Stir for a couple of minutes, then remove from heat.
  6. Toss the hot cooked pasta with the sauce, stirring in the cheese and parsley.
