Devils on Horseback Appetizer

Chicken livers are wrapped in bacon and presented on hot buttered toast strips. Add a pinch of cayenne, paprika and black pepper to add some 'devilment' to the dish and liven up the flavor.

Ingredients
 

  • 2 chicken livers
  • 6 fingers hot buttered toast
  • 3 strips streaky bacon
  • Cayenne pepper
  • Paprika
  • Black pepper

Method
 

  1. Wash and dry the livers. Cut each one into three.
  2. De-rind the bacon and cut each rasher in half.
  3. Wrap each piece of liver in bacon and broil (grill in UK English) or pan-fry for 2 or 3 minutes.
  4. Place one roll on each finger of toast.
  5. Sprinkle with black pepper, paprika and cayenne.
  6. Serve them devilishly hot.
