Ingredients
- 3 ripe bananas
- 1 teaspoon baking soda
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 cup (130 ml) applesauce
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup (225g) white sugar
- 2 cups (260g) all-purpose flour
Method
- Preheat the oven to 350 degrees F (190 degrees C).
- Put the bananas in a bowl and mash them using an electric mixer.
- Stir in the sugar and let the mixture stand for 15 minutes.
- Beat in the applesauce and eggs.
- Beat in the baking powder and baking soda, salt and vanilla.
- Next, gradually beat in the flour, mixing it in thoroughly.
- Pour the mixture into a nonstick spray-coated 9 x 5 inch loaf pan.
- Bake for 45 minutes or until a toothpick inserted in the center of the loaf comes out clean.
- Take the banana bread out of the oven and let it stand for 10 minutes.
- Remove it from the pan, slice and serve warm, perhaps with butter and/or honey.
Notes
You can use parchment paper to line the loaf pan if you want, or just some nonstick cooking spray instead
