Garlic Piri Piri Chicken Marinade

Bone-in chicken pieces soak in a lemon, garlic and chili mixture before cooking on a covered grill. The finished chicken has browned skin, plenty of garlic and an adjustable level of heat.

Ingredients
 

  • 2 pounds (900g) bone-in, skin-on chicken pieces
  • 3 tablespoons lemon juice
  • 10 minced garlic cloves
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • 2 tablespoons lemon zest
  • 1 teaspoon piri piri flakes or crushed red pepper flakes (or to taste)

Method
 

  1. Combine the lemon juice, garlic, olive oil, salt, lemon zest and chili flakes in a glass bowl.
  2. Set aside 2 tablespoons of the mixture in a separate covered container for brushing over the chicken later.
  3. Add the chicken to the remaining mixture and coat each piece well. Cover and refrigerate for 4 to 8 hours, turning the chicken once or twice.
  4. Preheat a covered grill to medium heat and lightly grease the grate.
  5. Remove the chicken from the marinade and discard the marinade that held the raw chicken.
  6. Arrange the chicken skin side down and cook with the lid closed for 10 minutes. Turn the chicken and brush it with the clean reserved mixture.
  7. Continue grilling with the lid closed for about 30 to 35 minutes, removing smaller pieces sooner if necessary.

Notes

  • Use ½ to 1 teaspoon chili flakes for mild heat. Use 2 teaspoons for a hotter result.
  • Marinate the chicken for 4 to 8 hours. A full 24 hours isn’t recommended for this recipe because the lemon juice can affect the outer texture.
  • Chicken pieces vary in size, so wings and smaller pieces may be ready before breasts or large thighs.
  • Only brush the chicken with marinade reserved before the raw chicken was added.
