Ingredients
- 15 oz (425g) can garbanzo beans, drained and rinsed
- ½ thinly sliced red onion
- 1/3 finely chopped red bell pepper
- 1/3 finely chopped green bell pepper
- 1/3 finely chopped yellow bell pepper
- 3 tablespoons chopped fresh parsley
- ¼ cup (60ml) extra-virgin olive oil
- 3 tablespoons white wine vinegar
- 1 teaspoon Dijon mustard
- 1 minced garlic clove
- 1 teaspoon ground cumin
- Salt and black pepper, to taste
Method
- Whisk the vinegar, extra-virgin olive oil, mustard and cumin together and season to taste.
- If you do not have a whisk, you can put these ingredients in a jar and shake it well.
- Put the bell pepper, garbanzo beans, parsley and onion in a bowl.
- Add the dressing and mix well.
- Taste the bean salad recipe and adjust the seasoning, adding more salt and pepper if needed.
