Whisk the tomato sauce, honey, brown sugar, soy sauce, sherry, Dijon mustard, chili, garlic, ginger, salt and black pepper together in a bowl.
Put the chicken drumsticks in a large zip-top bag or covered container.
Pour the marinade over the chicken and coat the drumsticks well. Refrigerate for at least 2 hours or up to 8 hours.
Preheat the oven to 400°F (200°C) and lightly grease a roasting pan or line a baking sheet with foil.
Remove the drumsticks from the marinade and arrange them in a single layer. Discard the used marinade.
Bake for 20 minutes, then turn the drumsticks over. Bake for another 15 to 20 minutes, or until browned and cooked through.
Check the thickest drumstick without touching the bone. It should register at least 165°F (74°C), though drumsticks are usually more tender at around 175°F to 185°F (80°C to 85°C).
Rest the chicken for 5 minutes before serving.
