Honey Soy Chicken Drumsticks with Chilies

These honey soy chicken drumsticks are marinated with garlic, ginger, green chili, tomato sauce and Dijon mustard, then baked until browned and cooked through.

Ingredients
 

  • 8 large chicken drumsticks, about 3 pounds (1.4 kg) total
  • ¼ cup (60 ml) tomato sauce
  • 2 tablespoons honey
  • 2 tablespoons dark brown sugar
  • tablespoons low sodium soy sauce
  • tablespoons dry sherry or 1 tablespoon sherry vinegar
  • 1 tablespoon Dijon mustard
  • 1 green chili, seeded and finely chopped
  • 1 garlic clove, minced
  • ¼ teaspoon ground ginger
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Oil, for greasing

Method
 

  1. Whisk the tomato sauce, honey, brown sugar, soy sauce, sherry, Dijon mustard, chili, garlic, ginger, salt and black pepper together in a bowl.
  2. Put the chicken drumsticks in a large zip-top bag or covered container.
  3. Pour the marinade over the chicken and coat the drumsticks well. Refrigerate for at least 2 hours or up to 8 hours.
  4. Preheat the oven to 400°F (200°C) and lightly grease a roasting pan or line a baking sheet with foil.
  5. Remove the drumsticks from the marinade and arrange them in a single layer. Discard the used marinade.
  6. Bake for 20 minutes, then turn the drumsticks over. Bake for another 15 to 20 minutes, or until browned and cooked through.
  7. Check the thickest drumstick without touching the bone. It should register at least 165°F (74°C), though drumsticks are usually more tender at around 175°F to 185°F (80°C to 85°C).
  8. Rest the chicken for 5 minutes before serving.

Notes

  • Keep the skin on for better browning, or remove it before marinating if preferred.
  • For extra sauce, reserve some of the marinade before adding the raw chicken. Simmer the reserved portion for several minutes, then brush it over the cooked drumsticks.
  • Turkey drumsticks can be used, though they’ll need considerably longer in the oven because of their size.
  • Feel free to reduce the green chili or leave it out for a milder marinade.
