Ingredients
- 4 tablespoons avocado oil
- 1 chopped onion
- 3 spiralized zucchini (courgettes)
- 1½ lbs (700g) ground pork (pork mince)
- Salt and black pepper, to taste
- 3 chopped green onions (spring onions)
For the Sauce:
- ¼ cup (60ml) soy sauce
- 2 teaspoons garlic powder
- ¾ teaspoon paprika
- 2 tablespoons avocado oil
- 1½ teaspoons black pepper
- ¾ teaspoon onion powder
- 1 tablespoon apple cider vinegar
- ¾ teaspoon salt
Method
- Preheat the oven to 400 degrees F (200 degrees C).
- Grease a 13 x 9 inch (33 x 23cm) casserole dish with half the avocado oil.
- Put the onion and zucchini noodles in the casserole dish.
- Add the remaining avocado oil and toss, grinding in some salt and black pepper too.
- Break the pork up a bit then toss gently with the ingredients in the dish.
- Roast for about 45 minutes in the oven, stirring occasionally.
- Whisk the sauce ingredients together.
- Take the casserole out the oven, sprinkle over the green onion.
- Pour the sauce on top and stir well to mix.
