Korean Tuna and Broccoli Pancakes

Starring tuna and broccoli, as well as garlic, soy sauce and other flavorful ingredients, these little pancakes are seriously delicious. Serve them hot for the best results.

Ingredients
 

  • 7 oz (200g) can tuna in water, drained
  • 1 egg
  • 2 garlic cloves
  • 2 tablespoons red bell pepper
  • ½ red onion
  • 2 tablespoons all-purpose flour (plain flour)
  • Handful of leftover cooked broccoli
  • Soy sauce, salt and pepper, to taste
  • Cooking spray

Method
 

  1. Put all the ingredients in the food processor and whiz for 30 seconds or until well mixed.
  2. Shape the mixture into 8 pancakes and pan-fry in cooking spray until crisp and golden brown.

Notes

  • Feel free to swap the broccoli for any leftover cooked vegetables
