Mediterranean Chicken Marinade with Tomatoes

Chicken breasts are coated in a blended tomato, basil and balsamic mixture before grilling. Reserved tomato and basil are added after cooking for a fresh finish.

Ingredients
 

  • 4 skinless, boneless chicken breasts
  • 2 tablespoons olive oil
  • 1 small handful fresh basil
  • ½ cup (125ml) balsamic vinegar
  • 5 quartered tomatoes
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 garlic cloves, minced

Method
 

  1. Add the garlic, olive oil, balsamic vinegar, salt and black pepper to a food processor or blender.
  2. Add most of the tomatoes and basil, reserving a little of each for serving.
  3. Blend until combined.
  4. Add the chicken and marinade to a large zip-top bag, making sure each chicken breast is well coated.
  5. Seal the bag and refrigerate for 6 to 8 hours.
  6. Preheat the grill to medium-high.
  7. Grill the chicken for about 5 minutes per side, or until the thickest part reaches 165°F (74°C).
  8. Remove the chicken from the grill and garnish it with the reserved tomatoes and basil.

Notes

  • Marinate the chicken for at least 6 hours. Leaving it for 8 hours gives the ingredients more time to season the meat.
  • Use a good-quality balsamic vinegar because its taste is noticeable in the finished dish.
  • A blender can be used in place of a food processor.
