Oven Roasted Tomatoes with Garlic

Flavored with garlic, rosemary and olive oil, these tomatoes roast in the oven until they are sweet, juicy and tender. They make a fantastic side dish or you can top risotto or pasta with them.

Ingredients
 

  • 4 fresh tomatoes
  • 1 finely chopped garlic clove
  • Olive oil
  • 1 teaspoon minced fresh rosemary
  • Salt and black pepper

Method
 

  1. Preheat the oven to 350 degrees F (180 degrees C).
  2. Slice the tomatoes and arrange them in a lightly greased baking dish.
  3. Drizzle oil over them.
  4. Scatter rosemary and garlic over them.
  5. Grind some salt and pepper on them.
  6. Roast for 25 minutes or until they are tender.
  7. Serve hot.
