Seafood Soup with Stuffed Squid

Simple recipes are often the best and this one is fantastic. Baby squid are stuffed with seasoned ground pork and then cooked in a simple bouillon with cilantro and green onion to garnish. This makes a wonderful appetizer or lunch.

Ingredients
 

  • 10 small (2-inch) squid
  • 1 minced garlic clove
  • 1 teaspoon black pepper
  • Large handful ground pork
  • 2 chopped green onions
  • 1 tablespoon soy sauce
  • Handful cilantro leaves
  • 3 cups (750ml) chicken or pork stock

Method
 

  1. Clean the squid.
  2. Mix the ground pork with the garlic, black pepper and soy sauce.
  3. Stuff the squid with the pork mixture and close the hole using toothpicks to secure.
  4. Bring the stock to a boil.
  5. Add the stuffed squid and cook for 8 minutes.
  6. Stir in the green onion and cilantro.
