Simple Baked Boneless Chicken Thighs

Boneless skinless chicken thighs are coated with olive oil, salt and black pepper, then baked at high heat for a quick, simple dinner.

Ingredients
 

  • 1 pound (450 g) boneless skinless chicken thighs
  • Salt and black pepper, to taste
  • Olive oil, as needed

Equipment

  • Mixing bowl
  • Baking dish
  • Instant-read meat thermometer

Method
 

  1. Preheat the oven to 425°F (220°C).
  2. Put the chicken in a bowl and rub it with enough olive oil to coat it lightly.
  3. Season both sides with salt and black pepper.
  4. Arrange the chicken in an ungreased baking dish without overlapping the pieces.
  5. Bake for about 20 minutes, or until the thickest part reaches at least 165°F (74°C).
  6. Cover the chicken and rest it for 10 minutes before serving.

Notes

  • Similar-sized thighs will finish cooking more evenly.
