Spiced Marinade for Cajun Chicken

Boneless chicken breasts are coated in a thick Cajun-spiced mixture before being grilled or broiled. Cajun seasoning, garlic, onion and chili give the chicken a smoky, gently spicy finish.

Ingredients
 

  • 4 boneless chicken breast halves
  • 2 tablespoons Cajun seasoning
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • 2 tablespoons vegetable oil
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Method
 

  1. Mix the oil with the onion and garlic powders, salt and black pepper, and Cajun seasoning to create a paste.
  2. You can add additional oil if the paste is too thick.
  3. Now rub the marinade paste all over your chicken.
  4. Put the chicken in a Ziploc bag.
  5. Chill for around 3 hours.
  6. Now broil or grill the chicken for about 6 minutes per side (the exact cooking time depends on the chicken thickness).
  7. Cook until the thickest part of each chicken breast reaches 165°F (74°C) on a food thermometer.

Notes

  • Cajun seasoning blends vary in salt and heat, so check yours before adding the extra salt.
  • If the paste is too thick to spread easily, add vegetable oil a teaspoon at a time.
