Ingredients
- 1 lb (900g) thick mashed potato
- 1 tablespoon paprika
- 2 teaspoons ground cumin
- Pinch of cayenne pepper
- Handful of cilantro
- 3 eggs
- Salt and pepper
- Oil for frying
Method
- Combine mash, spices, coriander, eggs and seasoning.
- With floured hands, make little cakes, cover and chill 30 minutes.
- Heat oil in pan and fry cakes, a few at a time, until crispy and golden on both sides.
- Drain on absorbent paper and serve hot.
