Vegan Parsnip Crisps Starter

All you need for this recipe are some parsnips and a mandolin for slicing them into nice thin rounds. A little salt and oil, and you are ready to make this unusual and delicious parsnip crisp recipe.

Ingredients
 

  • 2 parsnips, peeled and finely sliced with a mandolin
  • Vegetable oil for deep frying
  • Salt

Method
 

  1. Heat a heavy bottomed pan, half full of vegetable oil or until a breadcrumb sizzles in it.
  2. Add the parsnip slices in batches and fry until golden.
  3. Drain on kitchen paper and sprinkle with salt.
