White Wine and Lemon Chicken with Black Olives

This white wine chicken marinade combines lemon, olive oil, garlic, oregano, parsley and chopped black olives. Marinate boneless chicken breasts or thighs, then cook them on the grill, stovetop or in the oven.

Ingredients
 

  • 1 ¼ pounds (570 g) boneless skinless chicken breasts
  • ¼ cup (60 ml) dry white wine
  • ¼ cup (60 ml) extra-virgin olive oil
  • Juice and finely grated zest of 1 lemon
  • 2 garlic cloves, minced
  • 2 tablespoons chopped fresh Italian parsley
  • 1 tablespoon chopped fresh oregano
  • ¼ cup (35 g) pitted black olives, finely chopped
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Method
 

  1. Whisk the white wine, olive oil, lemon juice, lemon zest, garlic, parsley, oregano, olives, salt and black pepper together in a bowl.
  2. Put the chicken in a large zip-top bag or covered container. Pour the marinade over the chicken and coat each piece well and then refrigerate for 30 minutes to 2 hours.
  3. Preheat the grill to medium-high heat and lightly grease the grate.
  4. Remove the chicken from the marinade and let the excess drip off. Discard the used marinade.
  5. Grill the chicken for 5 to 7 minutes per side, depending on thickness.
  6. Check the thickest part with a meat thermometer. It should reach 165°F (74°C). Let the chicken rest for 5 minutes before serving.

Notes

  • Boneless skinless chicken thighs can replace the chicken breasts. They may need a few extra minutes to cook.
  • To cook the chicken on the stovetop, heat a lightly oiled skillet over medium heat and cook it for 5 to 7 minutes per side.
  • To bake it, cook the chicken at 425°F (220°C) for 18 to 22 minutes.
  • For extra sauce, set aside some of the marinade before adding the raw chicken. Simmer it for several minutes and spoon it over the cooked chicken.
