Leftover mashed potatoes are livened up with sour cream, and topped with parmesan and panko. Baked in the oven until hot and crispy, this makes a wonderful side dish and it goes with anything.

Ingredients
Leftover mashed potatoes
Sour cream
Panko (Japanese) breadcrumbs
Fresh parmesan flakes
Instructions
Preheat the oven to 400F (200C).
Stir a little sour cream into the leftover mashed potatoes.
Spread them into an ovenproof baking dish.
Top evenly with parmesan flakes.
Now sprinkle over the panko breadcrumbs.
Bake for 20 minutes, or until piping hot throughout and golden brown on top.
