  • 1 onion, thinly sliced
  • 1 cup (250ml) thick BBQ Sauce
  • 9 oz (250g) canned green chilies, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • ¼ teaspoon ground cinnamon
  • ½ cup chopped cilantro (20g chopped fresh coriander)
  • 3 lbs (1350g) boneless pork shoulder roast, trimmed

Instructions

  1. Combine everything except the pork and cilantro to make the sauce.
  2. Put the pork in the crockpot and pour the sauce over it, lifting the pork a bit so the sauce will go underneath.
  3. Cover and cook on a low heat until the pork is very tender.
  4. This will take 8 to 10 hours.
  5. Pull the pork apart or shred it with forks.
  6. If the sauce is very liquid, you can cook it on the stovetop for a while.
  7. Pour the sauce into a serving bowl and stir in the shredded pork and cilantro.
  8. Serve with split sandwich buns or flour tortillas garnished with cilantro for a splash of color.
