Spicy Potato Cakes

These potato cakes are made with mashed potato, spices and eggs, and they are lovely served with chicken, meat or fish. They would also work instead of hash browns with breakfast.


  • 1 lb (900g) thick mashed potato
  • 1 tablespoon paprika
  • 2 teaspoons ground cumin
  • Pinch of cayenne pepper
  • Handful of cilantro
  • 3 eggs
  • Salt and pepper
  • Oil for frying


  1. Combine mash, spices, coriander, eggs and seasoning.
  2. With floured hands, make little cakes, cover and chill 30 minutes.
  3. Heat oil in pan and fry cakes, a few at a time, until crispy and golden on both sides.
  4. Drain on absorbent paper and serve hot.
