Ingredients
- Leftover mashed potatoes
- Sour cream
- Panko (Japanese) breadcrumbs
- Fresh parmesan flakes
Method
- Preheat the oven to 400F (200C).
- Stir a little sour cream into the leftover mashed potatoes.
- Spread them into an ovenproof baking dish.
- Top evenly with parmesan flakes.
- Now sprinkle over the panko breadcrumbs.
- Bake for 20 minutes, or until piping hot throughout and golden brown on top.
