Zucchini Fritter Chaffles | Zucchini Waffles | Courgette Waffles

Low in carbs but high in flavor, zucchini fritter chaffles boast an incredible taste. They're quick and easy to prepare and they pair beautifully with just about any kind of meal. I like adding broccoli to mine but you can add any kind of minced vegetables.

Ingredients
 

  • 1/2 cup (60g) shredded cheddar
  • 1 tablespoon almond flour (finely ground almonds)
  • 1/4 cup (20g) grated zucchini (or finely chopped fresh broccoli florets, or a mixture!)
  • 1 large egg
  • 1/4 teaspoon garlic powder

Method
 

  1. Mix all the ingredients together in a small bowl using a fork.
  2. Pour half of the mixture into your chaffle maker and cook for 4 minutes or until golden and crisp.
  3. Repeat with the other half of the chaffle batter, then serve hot.

Notes

  • These pair with any kind of creamy dressing (such as ranch, blue cheese or mayo) or sugar-free ketchup.
