What Goes in Cheese Fondue?

You will need Swiss and Gruyere cheeses to make this cheese fondue recipe, along with garlic, white wine, salt, and nutmeg for flavor.

Feel free to use different cheeses, omit the garlic, wine and/or nutmeg, or double the quantities if you have a large enough fondue kit.

If you’re worried about your cheese separating, squeeze the juice of 1/2 a lemon into the wine before you add the cheese. This doesn’t affect the flavor much but keeps the consistency smooth.

Ingredients

  • 1/2 lb (225g) shredded Swiss cheese
  • 1/2 lb (225g) shredded Gruyere cheese
  • 1 garlic clove (optional)
  • 1 cup (235 ml) dry white wine
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 French bread loaf, in 1 inch cubes

Instructions

  1. Peel the garlic clove and cut it in half.
  2. Rub it all over the inside of your fondue pot.
  3. Simmer the wine in the fondue pot, then add the Swiss cheese, Gruyere cheese, about a quarter of it at a time.
  4. Stir the fondue after each cheese addition until it has melted.
  5. Next stir in the flour.
  6. When everything has melted together, stir in the salt and nutmeg.
  7. Serve the fondue hot with the French bread cubes.
