Super Low Calorie Cajun Lime Stir Fry

Low in calories yet sky-high in flavor, this low calorie Cajun lime stir fry is something you will want to make regularly. Vegetables such as bell peppers, celery, carrot and mushrooms are combined with tomato concentrate, Cajun seasoning and lime juice to make a simple yet wonderfully flavored dish. Work out the calories and it is only about 100, which is very low indeed.

The bell peppers are the main ingredient in this low calorie Cajun lime stir fry, supported by the other veggies, but you can swap the vegetables for others if you wish.

Broccoli, zucchini and okra would all work in our low calorie Cajun lime stir fry recipe. The sauce is made with tomato concentrate, Cajun seasoning and the juice of half a lime. At a pinch some squeezy lime juice out the bottle would suffice but use fresh lime juice for a better, fresher taste.

Serve this just as it is or with some rice if you like. Because this is quick and easy to cook it makes a nice dinner for any weeknight and you will love the tangy flavors it offers. This would work as a side dish with grilled chicken perhaps.

Low Calorie Cajun Lime Stir Fry: Boost the Spices

There might only be a few ingredients in this low calorie Cajun lime stir fry but if you like spicy flavors feel free to throw in a pinch of chili powder or a fresh chopped chili pepper.

Add this when you add the Cajun seasoning and if you are using a fresh chili remember to wash your hands in soapy water after chopping it. I say that because last night I chopped a chili and forgot to, then scratched my eye – argh!

Ingredients

Scale
  • 2 chopped bell peppers (1 red, 1 green)
  • Spray oil
  • 2 chopped celery ribs
  • 1 sliced carrot
  • 6 quartered mushrooms
  • 1 tablespoon tomato concentrate
  • ½ teaspoon Cajun seasoning
  • Juice of ½ a lime

Instructions

  1. Heat the spray oil in a skillet.
  2. Sauté the vegetables until softened.
  3. Add the Cajun seasoning and cook 1 minute.
  4. Add the tomato concentrate and lime juice.
  5. Cook gently for 5 to 10 minutes.

Notes

  • You can use any color of bell peppers you want, or even swap one for a poblano pepper.
