The recipe should serve 4 people, but if you plan on entertaining a larger group or you’d prefer to make your chile flautas the center of attention rather than an appetizer, just double the recipe. Even then, you’re still unlikely to end up with leftovers!

Green Chili Flautas Ingredients

You don’t need many ingredients for homemade Mexican dish flautas – just tortillas, green chile, cheese and corn, along with green salsa to serve. Home cooks are always pleased to find such an easy recipe, especially when the flavor is as rich as this.

You can use flour tortillas although corn tortillas are the usual choice. As for the corn, go for freshly cut off the cob, canned (drained well) or frozen. They all work.

And the cheese? Use anything you want – Monterey Jack, some cheddar, a Mexican blend… I recommend buying a block of cheese and shredding your own. The pre-shredded kind has cellulose starch to keep the shreds from sticking together and that can impede melting. So, it’s best to shred your own for that ooey-gooey cheesetastic perfection!

How to Serve Green Chile Flautas

These crunchy little tubes are great served with tasty green salsa spooned over them, and this makes a nice appetizer or even the main component of your main dish with some salad or Mexican rice on the side. I like salsa and Mexican crema drizzled over too. And some lime wedges and cilantro!

Ingredients

Scale
  • 1 cup (165g) sweet corn kernels, fresh, canned or frozen
  • ½ cup (100g) canned green chiles, chopped
  • 1 cup (120g) Monterey Jack cheese, shredded
  • 16 corn tortillas

Optional, to serve:

  • Green salsa
  • Mexican crema
  • Chipotle salsa
  • Lime wedges
  • Cilantro (fresh coriander leaves)

Instructions

  1. Heat some oil in a skillet over a medium heat while you warm the tortillas, chop the chile peppers and shred your cheese.
  2. Now combine the chiles, cheese and corn and spoon a little of this mixture into each tortilla.
  3. Fold the tortillas up into small tubes.
  4. Cook the flautas over a medium to high heat, turning occasionally, until the cheese is melted and the tortillas are golden brown all over.
  5. Drain on paper towels for a minute and then serve hot, topped with green salsa and any other condiments and/or garnishes you want.
