Put 3 tablespoons of olive oil, 2 minced garlic cloves, 1/2 teaspoon of dried thyme, 1/4 teaspoon of dried oregano, 3/4 teaspoon of lemon zest, 1/4 teaspoon of black pepper and 3/4 teaspoon of salt in a Ziploc bag or shallow glass dish, and mix well. Add the chicken and let it sit in this mixture for between 30 minutes and 6 hours to infuse it with flavor. Then remove the chicken, discard the marinade, and proceed with the recipe.
