Ingredients

  • 12 medium eggs
  • 2 teaspoons Dijon mustard
  • 1 tablespoon minced onion
  • 2 ½ oz (1/3 cup) mayonnaise
  • Salt and black pepper, to taste
  • Few drops of hot sauce (optional)

Instructions

  1. Hard cook the eggs by boiling them in water for 12 minutes.
  2. Drain the hot water from the pan and run cold water over the eggs.
  3. Let them sit in the cool water a few minutes.
  4. Peel the eggs and slice each one in half using a sharp knife.
  5. Transfer the yolks to a small bowl.
  6. Arrange the whites on a serving plate.
  7. Mash the yolks with a fork, then mash in all the other ingredients.
  8. Pipe or spoon this mixture into the egg white halves.
