  • 4 oysters on the half shell, juices reserved
  • 2 tablespoons fresh lemon juice
  • 55g (2 oz) unsalted butter
  • 4 tablespoon white wine vinegar
  • ½ kg (1 lb) rock salt
  • A good handful of chives, chopped
  • Handful fresh parsley leaves, chopped

Instructions

  1. Place the oysters on a bed of salt in a heatproof shallow dish.
  2. Chill until ready to cook.
  3. Melt the butter.
  4. Add the vinegar.
  5. Bring to a boil and reduce until the sauce is like syrup.
  6. Stir in the lemon juice, oyster juices and chopped chives.
  7. Divide this mixture between the oysters and put the dish under the broiler (grill in UK) for a couple of minutes.
  8. Scatter some chopped parsley over the oysters and serve right away.
