Ingredients

Scale
  • 6 tablespoons mayonnaise
  • 1 kg (2 lbs) new potatoes
  • 560g (1 lb) sweet, cured herrings, drained and cut into 2 cm strips
  • 8 pickled gherkins (green pickles), sliced thinly
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons sour cream
  • Salt and black pepper, to taste

Instructions

  1. Boil the potatoes until tender, drain and cut into wedges.
  2. Combine the mayonnaise, sour cream and dill in a large bowl.
  3. Season this mixture with salt and pepper.
  4. Put the gherkins, potatoes and herrings into a bowl with the dressing.
  5. Toss well, check the seasoning once more, and then serve.
