Ingredients

Scale
  • Nonstick cooking spray, as needed
  • 1 egg
  • 1 1/4 cups (135g) all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/4 cups (310ml) buttermilk
  • 1/4 cup (50g) white sugar

Instructions

  1. Preheat a skillet over a moderate to high heat, then squirt in a little nonstick cooking spray.
  2. Combine the flour, baking powder and soda, buttermilk, egg, sugar and salt in the blender.
  3. Ladle 1/3 of this mixture into the hot skillet and smooth it out into a 5-inch circle.
  4. If your skillet is big enough you can do several at once, else do the pancakes in batches.
  5. When the edges are golden brown and set, flip the pancakes over.
  6. Cook until golden brown on the other side too.
  7. Either keep the cooked pancakes warm while you cook the rest of the batter, or serve them and continue making the rest.
  8. You will get about 8 pancakes in total.
