Healthy Banana and Carrot Curry

This is really unusual but once you taste it you will want to make it regularly. If you like a fruity curry you won’t find a better one than this!

Ingredients

Scale
  • 2 carrots cut into 1 inch ( cm) lengths
  • 1 chopped tomato (optional)
  • 1 teaspoon curry powder
  • fl oz (75ml) orange juice
  • 1 small sliced banana
  • 1 small sliced onion
  • fl oz (75ml) water
  • 1 oz (30ml) yogurt

Instructions

  1. Boil the carrots and onion in the juice and water 10 minutes or until tender.
  2. Add the tomato and banana.
  3. Cook 1 minute.
  4. Add the curry powder and yogurt.
  5. Heat gently.
  6. This will serve 1 as a main dish or 2 if you are having other dishes.
