Ingredients
- 4 handfuls salad leaves
- 12 halved cherry tomatoes
- 1/2 diced cucumber
- 1/2 sliced red onion
- 4 oz (120g) crumbled feta cheese
- 20 pitted black olives
- Pinch of dried oregano
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons red wine vinegar
- Squeeze of lemon juice (optional)
- Salt and black pepper, to taste
Instructions
- Divide the salad leaves between 4 serving bowls.
- Arrange the tomatoes, cucumber, onion, cheese and olives on top.
- Scatter the cheese over the top and sprinkle on some oregano.
- Shake the oil, vinegar, salt and pepper together (and lemon juice if using) and drizzle this over the salad.
Notes
- If you prefer, you may serve the dressing on the side to let people serve themselves.
