If you’re a fan of quesadilla recipes, you might like to try an air fryer quesadilla recipe. Not only are air fryer quesadillas just as delicious as regular ones cooked in a skillet but they’re also quicker to make.
I love quesadilla recipes because you can put whatever you want in there. Start off with tortillas and cheese and then add anything – meat, chicken, vegetables, spices, herbs… anything!
You’ll already be more than familiar with quesadillas if you’re into Mexican food or Tex Mex cuisine. And this south of the border take on the humble sandwich makes a great snack, lunch, accompaniment to a bowl of homemade tomato soup or anything else you want it to be.

Air Fryer Quesadilla Filling Ideas
I love shredded cheddar cheese with shredded chicken and BBQ sauce. I also like cheese with pineapple and ham (OK this one you might love or you might hate!)
I typically including some kind of sticky ingredient like a little cream cheese or refried beans to help the quesadillas stick together. Once the cheese melts, they’ll stick together anyway, so it’s just a question of getting them into your air fryer basket in one piece (hint – add a tortilla, add the cheese and add the other tortilla on top, all in the air fryer basket!)
You can use any kind of cheese for quesadillas, making them as authentic or not as you want. A Mexican blend cheese would be good but so is a mozzarella and cheddar mix, so that’s your call.
A Sweet Air Fryer Quesadilla
Another idea is sweet quesadillas – you can add a sweet element, perhaps pairing thin Granny Smith apple slices with your cheese or else make dessert quesadillas with peanut butter, chocolate chips and marshmallow cream. OK that’s about as far away from authentic as you can get but they ARE good!!
I like to use a pizza wheel to slice my quesadilla into quarters to serve. You can use any size of tortillas you prefer and any amount of cheese you want in there.
If your air fryer has a very small basket, you can slice up the quesadillas before cooking them. If you’re doing that, add one tortilla, add the cheese and toppings and then add the other one on top, otherwise if you’re trying to put the whole thing in there a lot of cheese will fall out.
How to Tell When They’re Done
When the cheese is melted and the tortillas are golden brown and crisp, they’re ready to serve! Remove the air fryer quesadillas using metal tongs and plate them up.
What to Serve with Quesadillas
They’re good as they are with a snack (don’t forget the napkins – they can drip!) Or you can make a complete meal by pairing the quesadillas with sweet potato fries, onion rings, a Mexican inspired salad, or Mexican street corn. Even some Mexican fruits.

Ingredients
- 2 small tortillas
- Handful of shredded cheese
- Nonstick cooking spray
Optional Fillings:
- Salsa (not too liquidy)
- Sour cream
- Refried beans
- BBQ sauce
- Cooked chicken, beef, lamb or pork (chopped or shredded)
- Green onions (spring onions), chopped
- Cooked veggies (mushrooms, zucchini/courgette, carrots, bell peppers, chili peppers, corn kernels)
- Fresh herbs (cilantro/fresh coriander, parsley, basil, oregano)
- Spices (smoked paprika, onion powder, garlic powder, chili powder, chipotle chili powder, ground cumin)
Instructions
- Preheat your air fryer to 350°F/180°C.
- Sandwich your shredded cheese and chosen fillings/sauces/herbs etc between your tortillas, pressing down. Make sure the top and bottom of the quesadilla are spritzed with cooking spray (this helps them crisp up but feel free to omit).
- Add the quesadilla to your air fryer basket and cook for 4 minutes.
- Flip and cook for another 4 minutes.
- Slice and serve hot.
Notes
- If your quesadillas are coming apart, press down firmly with a spatula before flipping.
- Keep an eye on them. Mine too exactly 8 minutes to become golden brown and for the cheese to melt but your air fryer might be different.
